He has received advanced training in Epidemiology at the London School of Hygiene and Tropical Medicine, London, UK. Professor Vimal Karani has published extensively in areas related to nutrigenetics and non-communicable diseases and presently has more than 110 peer reviewed publications (including those in premier biomedical journals: Nature Genetics, Lancet, BMJ, PLoS Medicine and PLoS Genetics) and book chapters. He has received significant global media attention for his work on nutrition, lifestyle and cardiometabolic diseases. He has received funds as a PI and Co-I from various funding bodies and, in the last eight years, the grants that he has been associated with are of the value ~£3.6 million. Professor Vimal Karani will share how nutritional genetics could be used for developing personalised diets to overcome the risk of cardiometabolic diseases.

報(bào)告題目Modifications of Food Proteins to Biologically active Peptides and the Reduction of Allergenicity by Enzymatic and Microbial Routes

報(bào)告人Professor Andras Koris

報(bào)告時(shí)間2024年5月17,周五14:40-16:30

報(bào)告地點(diǎn)8號(hào)樓糧油食品學(xué)院金谷廳

報(bào)告人及內(nèi)容簡(jiǎn)介:

Dr. András Koris is a habilitated full professor and head of department of the Department of Food Process Engineering, Institute of Food Science and Technology, Hungarian University of Agriculture and Life Sciences. His research field of interests are development of downstream and upstream processes, process integration and intensification, techno-economical analysis in food and pharmaceutical industries. His research group members are involved in the topic of hypoallergenic food products, natural bioactive peptides, membrane bioreactor, membrane filtration, membrane emulsification, micro encapsulation, drying, extraction, development of environmentally benign technology and economical analysis of the process.

Professor Andras Koris will present his research objective, which focuses on developing bioactive peptides with hypoallergenic properties from liquid milk (soy and bovine) protein concentrate (LMPC). This objective will be achieved through enzymatic and sequential enzymatic-microbial hydrolysis. Currently, the consumption of different milks containing proteins with linear and conformational epitopes in their structure may pose a risk of food anaphylaxis in the SMP-sensitive community. Therefore, Professor Koris aims to undertake efforts to reduce the allergenicity of both soy and bovine milk..
